GROUND Just like roasting gives flavor to coffee beans, grinding determines coffee taste at the moment of preparation. Grinding has a significant impact on coffee brewing. The finer the coffee ground is, the slower the speed of water will be, resulting in a coffee with more body and flavor. CONTROL ON SITE DURING ALL ROASTING STAGES We conduct a first control where freshly harvested coffee is tasted; after it has been left to brew, we are ready to perform a pre-shipment tasting; and once the coffee arrives, prior to roasting, it is tasted again to verify that there was no alteration. Then, following the tasting sheet, we carry out a meteorological control, sensory impressions are assessed, and a physical analysis is completed.
